Urbanization rising incomes and changing lifestyles have diminished the consumption of traditional meals based on cereals vegetables and root crops. Eating out and the use of processed and convenience foods have become major parts of peoples lives. These changes in food choices and eating patterns have been attributed in part to the rise in health problems such as obesity diabetes cancer and heart disease. As scientists educators and communicators of food and health messages we have to understand the what when why where and how often of eating behavior in order to know how to influence these behaviors for good health. This two-and-a-half day symposium is designed to enhance our understanding of the determinants of consumer food choice and examine how individual behavior can be modified to promote health and prevent disease. The symposium will present the latest findings and methods in consumer research focusing on food and health behavior.
